FOOD: Rosemary Focaccia Bread
I hadn’t made focaccia in several years, and I got the hankering to do it again earlier this week. The recipe linked here is fantastic and demonstrates the simplicity of this oily, no-knead break. I dispensed with the rosemary and topped mine with fresh-roasted yellow peppers, caramelized onions & garlic, fresh pesto, and goat cheese.

A year ago this week, I was in a blind panic because it occurred to me that instead of returning to school at the end of August as a paraeducator, I could get an emergency teaching license and fulfill my lifelong dream of being a teacher. I couldn’t have done that without the excellent folks at UVEI. My first year teaching was a grueling experience, flying by the seat of my pants at the front of the classroom at my school and as a member of the class of teaching candidates at UVEI.
